Auntie Em’s…Homemade Basil Cashew Cheese
• 2 cups raw cashews soaked in filtered water overnight
• 3 Tbsp water
• 3 Tbsp freshly squeezed lemon juice
• 2 Tbsp nutritional yeast
• 2 cloves fresh garlic
• 1 tsp sea salt
• Pepper to taste
• A large bunch of basil
• ¼ of a small onion
• 1 Tbsp Olive Oil
Through everything into the Vita-mix and blend until smooth and creamy. The more water you add, the creamier and thinner the cheese will become.
